Fish in a Packet

This is a recipe for one, but it can be easily scaled to create as many portions as you need. Just remember that each portion needs its own bit of tin foil.
  • 1 filet of light fish (such as tilapia)
  • 1 tablespoon butter
  • 2 tablespoons lemon juice
  • fresh chopped vegetables (green or red peppers, broccoli florets, whatever you like)
  • salt and pepper
Preheat your oven to 350 degrees. Place your filet on a piece of tin foil. Sprinkle with salt and pepper. Cut up the tablespoon of butter and dot it about the fish, and drizzle with the olive oil. Scatter the vegetables around the fish. Or on it. Doesn't matter. Fold up the tin foil, sealing it tightly, remembering to leave a nice large pocket of air in the foil pouch. Bake for 20 minutes. Open the foil CAREFULLY as the steam will be very hot (for obvious reasons). Goes well over rice.
